Pretzel Rolls with Beer Cheese Sauce


4 tablespoons unsalted butter
1/2 cup yellow onion, chopped
1 bay leaf
4 tablespoons flour
2 cups beer (I used an IPA.  Use whatever kind you have on hand.)
1 cup heavy cream
1/2 teaspoon whole black peppercorns
1/4 teaspoon ground cloves
Pinch nutmeg
2-3 cups cheddar cheese, grated
Salt and pepper, to taste
