Barley & Feta Salad with Avocado

1 cup pearl barley, soaked over night
1 avocado, cubed
80 g feta, roughly crumbled
2 spring onions, finely sliced
1/2 cup frozen peas, defrosted
1 tbsp chia seeds (optional)
1 tbsp coriander (fresh or frozen), finely chopped
a splash of macadamia oil (or any other oil at hand)
1 small lemon, juice and zest
black pepper
