Lemon Coconut Squares


Ingredients
Base
3/4 cup (80g) gluten free oats
3/4 cup (135g) Medjool dates
3/4 cup (90g) almond meal (finely ground almonds) or you can use whole almonds
2-3 tbsp of water
Topping
3/4 cup (180ml) freshly squeezed lemon juice
60g (1/4 cup melted) coconut butter (not oil!)
1 tbsp melted coconut oil
1 large super ripe banana (approx. 150g)
60ml (1/4 cup) agave/maple syrup – you could also use date paste but the colour of the squares will change
1 tbsp agar flakes + 1/2 cup (125ml) boiling water
