Peanut Butter Oatmeal Chocolate Chip Lentil Blondies



Ingredients open

1/2 cup red lentils
1/2 cup all-natural creamy or crunchy peanut butter (I like Trader Joe’s)
1/3 cup pure maple syrup
1 tablespoon pure vanilla extract
1 cup gluten free rolled oats
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/3 cup mini vegan chocolate chips, plus 2 tablespoons for sprinkling on top (I use Enjoy Life brand)
