cups cooked black beans
1/4 to 1/2 cup light sour cream
green onions, white and green parts, chopped
teaspoon ground cumin
1/2 teaspoon sea salt
teaspoon freshly ground pepper
slices cooked bacon, chopped (optional)
small corn tortillas
Extra-virgin olive oil, for brushing
tablespoon coconut oil or unsalted butter
cup shredded white Cheddar cheese
avocados, peeled and thinly sliced
1/3 cup chopped fresh cilantro
lime, in wedges
